Breads, Rolls, and Muffins - Grits Rolls



INGREDIENTS
  • 2 (8-ounce) packages instant grits
  • 1/2 cup sugar
  • 1 tablespoon salt
  • 3 cups hot water
  • 1/3 cup vegetable oil
  • 6 to 6 1/2 cups flour, sifted
  • 2 packages dry yeast

INSTRUCTIONS
Combine grits, sugar, and salt in a large bowl. Add water, oil, and 2 cups flour. Beat two minutes with an electric mixer on low speed. Add 1 more cup flour and yeast. Beat 1 minute. Stir in enough flour to make a soft dough. Turn out on a well-floured board and knead until smooth and elastic, about 10 minutes. Divide dough in half and shape each into 18 balls. Place in two greased 8-inch round cake pans. Cover; let rise for one hour or until doubled in size. Bake in preheated oven at 400° for 30 to 35 minutes or until golden brown. Remove from pans; brush with butter. Serve warm.
Yield: 3 dozen.
