Cinnamon Bread Pudding with Praline Sauce

INGREDIENTS |
- 1 loaf cinnamon swirl bread

1 tablespoon vanilla flavoring

3/4 cup sugar

2 cups milk

8 ounces whipping cream

4 eggs

1/2 teaspoon cinnamon

Praline Sauce:
-
1 stick unsalted butter
-
1/2 to 1 cup chopped pecans
-
1 1/2 cups brown sugar
-
1/3 cup whipping cream
-
1/4 teaspoon cinnamon
-
1/2 cup sour cream
-
1/4 teaspoon vanilla

INSTRUCTIONS |
Preheat oven to 350º. Cube bread and place in a large mixing bowl. Combine remaining ingredients. Mix with bread cubes and soak for five minutes. Stir and then pour into a greased 81/2-x-11-x 2-inch baking dish. Bake for 35 to 40 minutes until set and top is lightly browned. Allow pudding to stand for 15 minutes. To make praline sauce, melt 1/2 stick butter in saucepan. Add pecans. Bring to a boil and cook until pecans change color. Remove from heat and add remaining butter. Stir until melted. Combine brown sugar, whipping cream, and cinnamon in saucepan. Cook on low until blended; increase heat and cook to 230º on candy thermometer (approximately 2 minutes). Stir in sour cream and vanilla until smooth; add pecan mixture. Allow to cool before serving (will thicken upon cooling). Serve warm bread pudding with praline sauce and a scoop of vanilla ice cream, if desired. |
