Desserts - Banana Cake with Peanut Butter Icing



INGREDIENTS
  • 2 1/4 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 large) very ripe bananas, mashed
  • 1 cup buttermilk, room temperature
  • 2/3 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • Peanut Butter Icing:
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup light corn syrup
  • 1/2 cup creamy peanut butter
  • 1 cup chopped unsalted peanuts

INSTRUCTIONS
In a medium mixing bowl, combine flour, baking powder, baking soda, and salt; set aside. In a separate bowl, combine bananas and buttermilk; set aside. Cream together shortening and sugar in a large mixing bowl, beating until light and fluffy. Add eggs, one a a time, beating well after each addition. Beat in vanilla.
Alternately add flour mixture and banana mixture, beginning and ending with flour. Beat well until blended. Spread evenly in a greased and floured 9-x-13-x-2-inch baking pan. Bake at 350ยบ for 30 to 35 minutes or until center is set. Cool competely.
In a medium bowl, combine cream cheese and corn syrup until smooth. Add peanut butter; beat until well blended. Spread on cooled cake. Garnish with chopped peanuts. Refrigerate before serving.
