Rice and Pasta -
Tomato-Bacon Vermicelli

INGREDIENTS |
- 6 slices bacon, chopped

2 tablespoons sliced green onions

1 clove garlic, minced

3 medium tomatoes, peeled and chopped

1/2 teaspoon basil

1/2 teaspoon salt

1/8 teaspoon pepper

6 ounces Vermicelli noodles, uncooked

INSTRUCTIONS |
In a large skillet, cook bacon until crisp. Drain, reserving 1/4 cup drippings, and return to skillet. Add bacon, green onions, and garlic, cook one minute. Stir in tomatoes, basil, salt, and pepper. Simmer five minutes. Cook Vermicelli according to directions; drain. Add to tomato mixture, toss to mix. Garnish as desired. Serve immediately. |
