Fruits and Vegetables -
Veggie Medley

INGREDIENTS |
- 2 tablespoons canola oil
-
1 to 2 ribs celery, chopped
-
1/2 cup sliced fresh carrots
-
1/2 cup chopped green bell pepper
-
1/2 cup chopped red bell pepper
-
2/3 cup broccoli florets
-
1 cup green cabbage, shredded medium
-
1/2 cup chopped green onions, (use both white and green parts of onions)
-
3 to 4 garlic cloves, minced
-
Onion powder (optional)
-
2 tablespoons low-sodium soy sauce

INSTRUCTIONS |
Sauté celery, carrots, peppers, broccoli, and cabbage in oil for about six minutes. Add green onions; sauté additional three minutes. Add garlic and sauté another one minute. Do not burn garlic. Remove from heat. Season with onion powder, if desired. Serve over rice; sprinkle with low-sodium soy sauce. |
