White Chocolate Cake

INGREDIENTS |
- 1/4 pound white chocolate

1 cup buttermilk

1 1/2 cups cake flour

1 teaspoon baking powder

1 can flaked coconut

1/2 cup butter, softened

4 egg yolks

2 cups sugar
-
4 egg whites
-
1 cup chopped nuts

Fudge Frosting:
-
1/2 cup butter
-
6 tablespoons milk
-
1 teaspoon vanilla extract
-
1 pound confectioner’s sugar
-
1/2 cup cocoa

INSTRUCTIONS |
Preheat oven to 350°. Melt chocolate over hot water. Add remaining cake ingredients; mix well. Pour into two 9-inch round cake pans or one 9-x-13-inch pan and bake for 45 minutes. Combine frosting ingredients in a double boiler. Place over simmering water and blend until smooth. Remove from heat. Cool, stirring frequently until frosting reaches desired spreading consistency. Frost cake. |
