Meats & Seafood - Saucy Cranberry Meatballs



INGREDIENTS
  • 2 pounds ground turkey
  • 2 eggs, beaten
  • 1 cup fine dry bread crumbs
  • 1 (1-ounce) envelope dry onion soup mix
  • 1 (16-ounce) can whole-berry cranberry sauce
  • 1 cup ketchup
  • 1 cup brown sugar
  • 1 (16-ounce) can sauerkraut, rinsed and drained
  • 1 cup water

INSTRUCTIONS
Preheat oven to 350°. In a large bowl, combine ground turkey, eggs, bread crumbs, and soup mix. Form into meatballs, using approximtely 2 tablespoons of mixture for each. Arrange meatballs in a single layer in a 9-x-13-x-2-inch baking dish.
Combine cranberry sauce, ketchup, brown sugar, sauerkraut, and water in a medium bowl. Mix well. Pour sauce over meatballs. Bake until bubbling, about 1 hour.
Yield: Six to eight servings.
