Cakes and Pies -
Peanut Butter Candy Pie

INGREDIENTS |
- 3 eggs

1/2 cup sugar
-
1 cup light corn syrup

1 teaspoon vanilla

1/4 teaspoon salt
-
1/2 cup smooth peanut butter
-
1 (9-inch) pie shell, unbaked
-
1/2 cup semisweet chocolate chips
-
1/4 cup flaked coconut

INSTRUCTIONS |
In a medium mixing bowl, beat eggs; gradually beat in sugar, mixing well. Mix in syrup, vanilla, salt, and peanut butter, blending thoroughly. Pour into pie shell. Bake at 300° F. for 40 to 45 minutes.
While pie is hot, place a circle of chocolate chips in center of pie; sprinkle remaining chips around outside edge. Fill in remainder of top of pie with coconut. Cool before serving. |
