Dried Sour Cherry Fried Pies

INGREDIENTS |
- 1 pint dried sour cherries

2 cups water
-
1 cup sugar or equal amount of Splenda
-
1 teaspoon almond extract

Crust:
-
1 cup all-pupose flour
-
1/4 teaspoon baking powder
-
1/2 teaspoon salt
-
3 tablespoons shortening
-
Enough water to moisten the mixture

INSTRUCTIONS |
Place cherries in water and cook until tender. Drain liquid; add sugar and almond extract and stir well. Combine crust ingredients to form dough; roll out very thin. Cut into five or six equal-size pieces. Put 1 teaspoon of cooked cherries onto each piece of dough. Fold over and crimp edges with a fork to close the crust. Fry in a skillet of hot oil, turning to brown on both sides. Drain on paper towels. Yield: Five to six servings. Note: You can also brush the pies with butter and bake in the oven at 350° until brown. |
