Desserts - Caramelized Dried Fruit Compote



INGREDIENTS
  • 11/2 cups each of dried apricots and prunes
  • 1 cup honey (or combination of honey and maple syrup)
  • 3/4 cup red wine
  • 11/4 cups orange juice (preferably fresh-squeezed)
  • 1 (3-inch) cinnamon stick
  • 1 tablespoon chopped fresh ginger or 1/4 cup candied ginger (optional)

INSTRUCTIONS
Preheat oven to 350°. Coat an oven-safe baking dish with nonstick spray. Roughly chop the dried fruit into 1/2-inch pieces and place with cinnamon stick and ginger in the baking dish. Combine liquid ingredients; pour over dried fruit. Fruit should be mostly covered. Bake until fruit is very tender and liquid thickens, about 45 minutes. Stir once or twice while baking.
Serve with hot cereal, meats, or as a dessert topping.
Note: Feel free to use any dried fruit that appeals to you. For a nonalcoholic version, replace the red wine with an equal amount of Concord grape juice.
