Pot Roast Meatloaf

INGREDIENTS |
- 1 pound lean ground beef

2/3 cup evaporated milk

½ cup fine dry bread crumbs

½ cup ketchup

2 tablespoons Worcestershire sauce

1 teaspoon salt
-
¼ teaspoon pepper
-
3 medium potatoes
-
3 medium onions
-
3 medium carrots
-
2 teaspoons dried parsley flakes
-
1 teaspoon salt
-
Dash of pepper

INSTRUCTIONS |
Mix ground beef, milk, bread crumbs, ketchup, Worcestershire sauce, 1 teaspoon salt, and ¼ teaspoon pepper. Shape into a loaf in the center of a greased pan. Peel and chop the vegetables and place around the meat. Mix parsley, 1 teaspoon salt, and dash of pepper. Sprinkle over vegetables. Cover the pan tightly with foil. Bake at 375° for one hour or until the vegetables are tender. Uncover and drain off excess grease. Bake 10 minutes to brown.
