Meats & Seafood -
Busy Day Lunch

INGREDIENTS |
- 1 pound lean ground beef
-
Salt and pepper to taste

¼ cup dry sherry

1 large onion, thinly sliced
-
12 ounces baking potatoes, peeled and sliced in one-inch pieces
-
12 ounces baby carrots
-
2½ pats butter, divided
-
1 cup water
-
Cherry tomatoes (optional)

INSTRUCTIONS |
Sprinkle beef with salt and pepper. Form into four patties. Place each patty in center of a 12-inch square of foil. Sprinkle with sherry. Divide the vegetables into four portions. Pile vegetables around and on top of beef patties. Top each with ½ pat of buttter. Fold foil over meat and vegetables and seal. Place beef packets in a baking pan. Pour water around the packets. Bake at 375° for approximately 50 minutes or until done. Serve hot. Garnish with cherry tomatoes if desired. Serve with a green salad and your favorite condiments.
