Lettuce Bread

INGREDIENTS |
- 2 eggs

1 cup sugar

½ cup oil

1½ teaspoons grated lemon rind

1½ cups all-purpose flour

2 teaspoons baking powder
-
½ teaspoon salt
-
½ teaspoon ginger
-
1 cup lettuce, finely chopped
-
½ cup nuts, chopped

INSTRUCTIONS |
Beat together eggs, sugar, oil, and lemon rind. Add sifted flour, baking powder, salt, ginger, and lettuce. Beat well; stir in nuts. Bake in a greased 9-x-5-inch loaf pan at 375° for 55 minutes. Cool 15 minutes in pan. Remove and sprinkle with powdered sugar, if desired. Note: This can be made from leaf lettuce from the garden or regular head lettuce. It’s pretty and different.
