Breads, Rolls, and Muffins -
Cracker Candy
|
INGREDIENTS |
- 1 sleeve saltine crackers (or as many as will fit a jellyroll pan)
-
1 cup butter
-
1 cup sugar
-
11/3 cups chopped pecans
-
11/3 cups mini chocolate chips
|
INSTRUCTIONS |
Preheat oven to 350°. Line a jellyroll pan with aluminum foil. (Don’t use a regular cookie sheet — it needs to have sides, or you will have a mess!) Place crackers on foil and set aside. In a large sauce pan, bring butter and sugar to a rolling boil, stirring constantly. Boil exactly five minutes. Pour over crackers, covering evenly. Bake for five to 10 minutes or until light golden brown, watching carefully — it can burn easily. Take out of oven and sprinkle with pecans and mini chips. Put back in oven just until chips become shiny. Remove from oven and cool completely. Peel off the foil and break into pieces.
