Poultry and Eggs -
Southern-Style BBQ Chicken Kabobs (diabetic)

INGREDIENTS |
- 1 1/2 cup catsup
-
1 cup mustard
-
1/2 to 2/3 cup vinegar (cider)

1 tablespoon Worcestershire sauce

1/2 teaspoon maple extract
-
3 1/2 teaspoons sugar substitute (Sweet & Low or Equal)

1/2 teaspoon coarsely ground black pepper
-
2 tablespoons butter or margarine
-
1 1/2 pounds skinless, boneless chicken breasts, cut into 3/4-inch cubes
-
2 small yellow summer squash, sliced
-
12 medium mushroom caps
-
1 large green pepper, cut into 1-inch squares

INSTRUCTIONS |
In a medium saucepan, mix all ingredients except chicken and vegetables. Cook over medium heat until sauce is hot and butter melted.
Assemble chicken cubes and vegetables on skewers. Grill over medium-hot coals for about 10 to 15 minutes or until done. Turn kabobs occasionally and baste generously with barbecue sauce. |
