Sweet Potato-Banana Custard

INGREDIENTS |
- 2 cups cooked sweet potatoes

2/3 cup mashed bananas

1 (12-ounce) can evaporated skim milk

¼ cup packed brown sugar

2 eggs, beaten

½ teaspon salt

½ cup raisins
-
1 tablespoon sugar

½ teaspoon nutmeg
-
½ teaspoon cinnamon

INSTRUCTIONS |
Mix sweet potatoes and bananas; add milk. Stir in brown sugar, eggs, and salt until blended. Add raisins. Combine sugar and spices and sprinkle on top. Pour into a glass baking dish coated with non-stick spray. Set dish on a pan of water. Bake at 325° for 35 minutes.
