Desserts - Sweet Potato-Banana Custard



INGREDIENTS
  • 2 cups cooked sweet potatoes
  • 2/3 cup mashed bananas
  • 1 (12-ounce) can evaporated skim milk
  • ¼ cup packed brown sugar
  • 2 eggs, beaten
  • ½ teaspon salt
  • ½ cup raisins
  • 1 tablespoon sugar
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon

INSTRUCTIONS
Mix sweet potatoes and bananas; add milk. Stir in brown sugar, eggs, and salt until blended. Add raisins. Combine sugar and spices and sprinkle on top.
Pour into a glass baking dish coated with non-stick spray. Set dish on a pan of water. Bake at 325° for 35 minutes.
