Breads, Rolls, and Muffins -
A Honey of a Biscuit

INGREDIENTS |
- 2½ cups all-purpose sifted flour

2½ teaspoons baking powder

1 cup cornmeal

2 teaspoons brown sugar

1 teaspoon honey
-
½ cup orange juice

1/3 cup oil

4 ounces cream cheese
-
2/3 cup buttermilk

INSTRUCTIONS |
Into a mixing bowl, sift together flour and baking powder. Stir in cornmeal, brown sugar, honey, orange juice, and oil. Add cream cheese and mix until dough resembles coarse meal. Add buttermilk and stir just until dry ingredients are moistened. Knead 20 times on heavily flour surface. Roll out to a ¾-inch thickness then cut with a 2-inch cutter. Place on baking sheet or into a muffin tin. Bake in preheated 450º oven for 15 minutes or until golden brown. Yield: 12 biscuits.
