Peanut Butter Nuggets

INGREDIENTS |
- 2/3 cup crushed cornflakes

½ cup unsweetened shredded coconut

½ cup smooth or crunchypeanut butter
-
2 tablespoons honey
|
INSTRUCTIONS |
In a mixing bowl, combine ½ cup of the crushed cornflakes, coconut, peanut butter, and honey. Mix well. Divide the mixture into 18 portions and shape each into a ball. Roll the balls in the remaining cornflakes. Chill nuggets until firm. The cook says, “These are a great diabetic dessert with each nugget having 75 calories.”
