Meats & Seafood - Fruited Chicken Salad



INGREDIENTS
  • 1 (5-ounce) can chunk white chicken or turkey, drained
  • 1½ cups cut-up mixed fruit (strawberries, peaches, nectarines, etc.)
  • 1/3 cup vanilla low-fat yogurt
  • 1½ teaspoons orange juice

INSTRUCTIONS
In a mixing bowl, combine chicken and fruit; arrange on a lettuce-lined plate. Mix yogurt and orange juice and drizzle over chicken mixture.
Garnish salad with slices of cantaloupe, if desired.
Yield: 1½ cups
