Peanut Butter-Marmalade Chicken

INGREDIENTS |
- 1 teaspoon salt

1/4 teaspoon pepper

1/8 teaspoon ground ginger

2 whole chicken breasts, split and skinned

1/3 cup peanut butter

1/3 cup orange marmalade
-
3 tablespoons orange juice
-
1 tablespoon lemon juice

1 cup round buttery cracker crumbs

1/4 cup vegetable oil

INSTRUCTIONS |
Combine salt, pepper, and ginger; rub into chicken. Combine peanut butter, marmalade, orange juice, and lemon juice. Dip chicken in peanut butter mixture; coat well with cracker crumbs.
Pour oil into a 13-x9-x2-inch baking dish; arrange chicken in dish. Bake at 350° F for 30 minutes. Turn chicken and cook 30 additional minutes or until done.
Yield: Four servings. |
