Meats & Seafood - Grilled Tortilla Stack

  • 10 (8-inch) flour tortillas
  • 1 (10-ounce) can Rotel, any kind
  • 1 (16-ounce) can refried beans
  • 1 whole skinless chicken breast, grilled and shredded
  • 2 1/2 cups shredded Cheddar cheese
  • 1 1/2 cups shredded lettuce
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped green onion


Preheat oven to 350ยบ. Coat each side of tortillas with nonstick spray and place one on a baking sheet. Combine Rotel and refried beans; spread cup over tortilla and top with 2 tablespoons chicken, cup cheese, and another tortilla. Repeat layering, ending with cheese. Bake for 20 minutes or until heated through. Top with lettuce, pepper, and onion. (A cup of corn is good, too.)
