Meats & Seafood - Polynesian Spare Ribs



INGREDIENTS
  • 1 (20-ounce) can chunk pineapple in juice
  • 4 pounds pork spare ribs
  • 1/2 cup soy sauce
  • 1/4 cup catsup
  • 2 tablespoons brown sugar
  • 1 clove garlic, pressed

INSTRUCTIONS
Drain pineapple, reserving juice. Cut ribs into serving pieces and place in a shallow pan, rib ends down. Cover tightly with foil; bake at 325° F for 45 minutes. Combine pineapple juice with soy sauce, catsup, brown sugar, and garlic. Remove foil from ribs and drain off drippings. Turn ribs over and pour sauce over ribs. Cover loosely with foil and bake for 25 more minutes. Turn ribs again and top with pineapple. Brush well with sauce; return to oven and bake, uncovered, for 20 minutes or until ribs are glazed. Yields four servings.
