Recipe of the Month Meats & Seafood - Peach Picante Pork

  • 1 or 2 pounds (4 to 6 chops) pork loin boneless center-cut chops
  • 2 tablespoons oil
  • 2 envelopes taco seasoning mix
  • 1 (16-ounce) jar picante sauce
  • 2/3 cup peach preserves
  • 1 green pepper, sliced in strips
  • 1 medium onion, sliced in strips

Cut pork chops in 1/4- to 1/2-inch strips. Roll in taco seasoning and brown in large skillet with oil. Remove from skillet; add pepper and onion slices and saute for five to 10 minutes.

Drain excess oil and add pork strips and picante sauce mixed with peach preserves. Bring to a boil, cover skillet, and simmer for 30 minutes. Serve over rice if desired.
