Meats & Seafood - Farmer’s Casserole

  • 3 cups frozen shredded hash- browns
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup diced, fully cooked ham (deli meat is fine)
  • 1/4 cup chopped onion
  • 4 eggs
  • 1 (12-ounce) can evaporated milk
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt

Place hashbrowns in greased 8-inch square pan; sprinkle with cheese, ham, and onions. Beat together eggs, milk, pepper, and salt; pour over all. Cover and refrigerate overnight. Remove from refrigerator 15 minutes before baking. Bake uncovered at 350° for 55 minutes.
