Poultry and Eggs - Pollo Pot Pie Casserole

  • 6 boneless, skinless chicken breasts
  • 3 stalks celery, chopped
  • 1 onion, chopped
  • 3 carrots, chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup water or chicken stock
  • 1 can corn, drained
  • 1 can peas, drained
  • 1 can mushrooms, drained
  • 1 teaspoon hot sauce
  • 1 teaspoon paprika
  • 2-3 cups crumbled Ritz or Townhouse crackers
  • 1 stick butter, melted
  • 1 cup shredded Cheddar cheese

In a large pot, stew first six ingredients in 2 quarts of water for about 30 minutes; drain, allow to cool to touch, and then shred chicken. Place ingredients in a 9-x-13-inch baking dish.
Combine next nine ingredients and pour over chicken mixture. Top with cracker crumbs; drizzle melted butter over top. Bake at 350ยบ for 25 minutes. Remove from oven and sprinkle cheese over top; bake another five minutes.
