Cakes and Pies - Pinto Bean Cake



INGREDIENTS
  • 1 cup sugar
  • 1 stick butter
  • 2 eggs
  • 2 cups pinto beans, cooked
  • 1 cup self-rising flour
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 2 cups diced, peeled apples
  • 1 cup raisins
  • 1/2 cup pecans
  • 1 teaspoon vanilla flavoring
  • Frosting:
  • 1 box confectioner’s sugar
  • 2 tablespoons bean juice
  • 1 teaspoon vanilla
  • 4 tablespoons butter
  • 2 tablespoons milk

INSTRUCTIONS
Cream sugar, flour, and butter; add eggs and mashed beans. Sift all dry ingredients together and add to creamed mixture along with apples, raisins, pecans, and vanilla. Mix well and pour into greased tube pan. Bake at 350° for one hour.
Combine frosting ingredients and spread on cake.
