Cakes and Pies - Canned Apple Pie Filling

  • 28 cups peeled, sliced apples
  • 1 cup cornstarch
  • 4 1/2 cups sugar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 10 cups water
  • 2 drops yellow food coloring
  • 3 tablespoons lemon juice

In a saucepan, mix cornstarch, sugar, cinnamon, nutmeg, and salt; add water. Cook until thick and bubbly.
Peel, core, and slice apples. Fill quart jars half full with apples. Pour in enough filling to cover apples, then add more apples and more filling.
Place lids on jars and process in a boiling water bath for 20 minutes.
Yield: Seven quarts
Note: To make a pie, simply empty the jar into a pastry shell and bake at 350° for 40 to 50 minutes.
