Sauces and Marinades - Spaghetti Sauce



INGREDIENTS
  • 1 clove garlic, chopped
  • 1/2 bushel tomatoes
  • 3 pounds (2 large) onions, chopped
  • 4 green peppers, chopped
  • 1 cup olive oil
  • 1 cup sugar
  • 1/3 cup salt
  • 1 tablespoon each basil, oregano, and parsley
  • 5 (12-ounce) cans tomato paste

INSTRUCTIONS
Cook tomatoes with peelings on; strain through colander. Add garlic, pepper, and onions. Cook 1 1/2 hours. Add sugar, salt, spices, oil, and tomato paste and cook 45 minutes over medium heat. Pour into hot sterilized jars and seal.
Yield: 6-8 quarts.
