Sauces and Marinades - Marinated Cucumber & Pepper Salad

  • 2 pounds cucumbers
  • 5 green peppers
  • 2 teaspoons salt
  • 1 teaspoon pepper or pepper to taste
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • 2 hard-boiled eggs

Peel cucumbers; remove seeds. Cut into very thin slices; season with salt. Place in a colander over a bowl in the refrigerator; drain for 12 hours.
Press out all remaining water from cucumbers and gently pat dry with paper towel. Slice green peppers and add to cucumber slices in a bowl. Add lemon juice and olive oil; allow vegetables to marinate for two hours.
To serve, place on a platter and garnish with quartered eggs.
