Salads - Nappa Cabbage Salad

  • 1 head (2 pounds) Nappa cabbage, chopped
  • 8 to 10 green onions, sliced thin
  • 1 stick margarine or butter
  • 2 packages Ramen noodles, crumbled (discard flavoring)
  • 1/2 cup sesame seeds (or poppy seeds or both)
  • 2 1/2 ounces sliced almonds
  • 1 cup oil
  • 1/2 cup vinegar (cider)
  • 1 cup sugar
  • 2 teaspoons soy sauce

Mix cabbage and green onions together in a container large enough for entire salad. Place in cooler.

Saute butter, noodles, sesame seeds, and almonds together over low heat until brown. Cool. Place in plastic container or zipper bag.

Combine oil, vinegar, sugar, and soy sauce in a jar with a good lid. Shake well.

When ready to eat, add noodle mixture and dressing to cabbage. Stir lightly, but well.
