Cookies and Candy - St. Patty’s Cornmeal Cookie Flower

  • 3/4 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 cups self-rising flour
  • 1/2 cup self-rising cornmeal
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 tablespoon green food coloring
  • Shamrock cookie cutter
  • Small leaf cookie cutter

In a large bowl, mix butter and sugar. Add eggs and beat on medium speed with an electric mixer. Add all other ingredients; mix well.
Roll out dough. Using the shamrock cookie cutter, cut out a shamrock shape for each cookie. Roll out a thin 3-inch line of cookie dough for the flower stem. Cut out two small leaf shapes and place on each side of the flower at the bottom of the shamrock.
Bake at 350° until golden brown. Yield: 2 1/2 dozen.
