Poultry and Eggs - Pineapple Chicken Stir Fry



INGREDIENTS
  • 2 tablespoons sugar
  • 1 tablespoon vinegar
  • 1 tablespoon ketchup
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon ginger
  • 1 pound boneless, skinless chicken breast
  • 1 (16-ounce) package frozen stir fry vegetables
  • 1 (8-ounce) can pineapple chunks, drained
  • 2 tablespoons vegetable oil
  • Hot cooked rice

INSTRUCTIONS
Mix first six ingredients and set aside. Cut chicken into strips and stir-fry in oil for five to six minutes.
Add vegetables and stir-fry until tender. Stir in pineapple chunks. Add soy sauce mixture and heat thoroughly.
Serve over hot rice.
