Pancakes and Waffles - Apple, Potato, and Sausage Waffles

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup water
  • 3 large eggs, separated
  • 2 tablespoons butter, melted
  • 6 ounces pork or turkey sausage, cooked and crumbled
  • 1/2 cup potatoes, peeled, cooked, and finely chopped
  • 1/2 cup apple, peeled and grated

Combine flour, baking powder, and salt in a bowl. Whisk together water, egg yolks, and butter. Pour into dry ingredients, stirring with a few quick strokes to form a lumpy batter. Stir in sausage, potatoes, and apples. Place egg whites in medium-size bowl and beat until stiff. Using a rubber spatula, gently fold egg whites into batter. Spoon onto hot, greased waffle iron. Cook until done. Serve with apple slices, butter, and honey.
