Fruits and Vegetables - Cheesy Green Onion Quiche

  • 1 (9-inch) pie pastry
  • 8 slices bacon, cooked and crumbled
  • 3/4 cup (3 ounces) Cheddar cheese, shredded
  • 3/4 cup (3 ounces) Swiss cheese
  • 4 eggs, beaten
  • 1 (8-ounce) carton sour cream
  • 1/2 cup half-and-half
  • 1/4 cup green onions, sliced
  • 1 tablespoon all-purpose flour
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Dash of red pepper

Prick bottom of pastry with fork. Bake at 400° for three minutes. Remove from oven gently, prick with a fork, and bake five minutes longer.
Sprinkle bacon and cheese over pie shell. Combine remaining ingredients; mix well. Pour into shell; bake at 375° for 40 to 45 minutes.
