Breads, Rolls, and Muffins - Cinnamon Apple Mince Muffins

  • 2 cups flour, unsifted
  • 1 tablespoon baking powder
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup apple juice
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 1/3 cups ready-to-use mincemeat
  • 1 cup apples, finely chopped
  • Glaze:
  • 1/4 cup powdered sugar
  • 1/8 teaspoon ground cinnamon
  • 5 to 6 teaspoons apple juice

Preheat oven to 400°. Grease 18 muffin cups or line with paper baking cups. In a large bowl, combine all ingredients, stirring only until blended. Spoon equal portions into muffin cups. Bake 18 to 20 minutes or until lightly browned. Cool one minute. Remove from muffin cups.

In a small bowl, blend powdered sugar, 1/8 teaspoon cinnamon and 5 or 6 teaspoons apple juice to form glaze. Spoon over muffins. Serve warm. Store covered at room temperature.
