Breads, Rolls, and Muffins - Sour Cream Coffee Loaf

  • 1/2 cup butter or margarine
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 cup dairy sour cream
  • 1 teaspoon grated lemon rind (optional)
  • 2 cups self-rising flour, sifted
  • 1/2 cup chopped nuts
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon

Preheat oven to 350°F. Cream butter and sugar together until fluffy. Add eggs, one at a time; beat until well blended. Fold in sour cream and lemon rind. Gradually fold flour into creamed mixture, but do not beat.

Spoon half the batter into prepared pan or pans. Blend brown sugar, cinnamon, and nuts together. Sprinkle half sugar mixture over batter. Spoon remaining batter over sugar layer, and top with remaining sugar mixture. Pat down gently.

Bake for 50 to 60 minutes or until done. Can be baked in three mini-loaf pans or one 9x5x3-inch pan.
