Breads, Rolls, and Muffins - Honey Vanilla Oat Bran Muffins

  • 2 1/4 cups oat bran
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup raisins
  • 1/4 cup nuts, chopped
  • 8 ounces lowfat vanilla-flavored yogurt
  • 6 tablespoons honey
  • 2 egg whites
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Heat oven to 425°. Combine dry ingredients in large mixing bowl. Stir in raisins and nuts until well coated.
Combine liquid ingredients in small bowl; mix well. Stir liquid ingredients into dry ingredients just until moistened.
Divide batter evenly among 12 paper-cup lined muffin cups. Bake 15 to 18 minutes, or until toothpick inserted in center comes out clean. Serve warm or cold.
