Meats & Seafood - Grilled Polynesian Game Hens

  • 2 Cornish game hens, halved
  • 1/2 cup soy sauce
  • 1/4 cup cooking oil
  • 1 (6-ounce) can pineapple juice
  • 1 small can pineapple slices (reserve juice)
  • 1 teaspoon dry mustard
  • 2 tablespoons brown sugar
  • 2 teaspoons ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground pepper

Combine soy sauce, oil, pineapple juices, and spices in a small saucepan; simmer for 10 minutes. Cool. Marinate game hen halves for two to three hours, turning occasionally.
Remove hens from marinade. Grill for about 20 minutes on each side, basting with marinade until done. Garnish with pineapple slices. Yield: Four servings.

Note: Serve with rice or a baked potato, salad, and Hawaiian bread.
