Desserts - Impossible Green Bean Pie



INGREDIENTS
  • 8 oz. fresh green beans, cut lengthwise into strips
  • 1 (4 oz.) can mushroom stems and pieces, drained
  • ½ cup chopped onion
  • 2 cloves garlic, crushed
  • 1 cup (about 4 oz.) shredded cheddar cheese
  • 1½ cups milk
  • ¾ cup Bisquick baking mix
  • 3 eggs
  • 1 tsp. salt
  • ¼ tsp. pepper

INSTRUCTIONS
Heat oven to 400°. Lightly grease 10-x-1½ inch pie plate. Heat beans and 1 inch of salted water to boiling; cook, uncovered, 5 minutes. Cover and cook until tender for 5 to 10 minutes; drain. Mix beans, mushrooms, onion, garlic, and cheese in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour onto pie plate. Bake until golden brown and knife inserted halfway between the center and edge comes out clean, 30 to 35 minutes. Let stand for 5 minutes before cutting. Refrigerate any remaining pie.
