Meats & Seafood - Italian Pancake Casserole

  • 2 eggs
  • 2/3 cup milk
  • 1/2 cup plain flour
  • 1/4 teaspoon salt
  • 1 pound hamburger meat
  • 1 (6-ounce) can tomato paste
  • 2 tablespoons onion, minced
  • 1 teaspoon basil
  • 3/4 teaspoon garlic salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup creamed cottage cheese
  • 2 cups mozzarella cheese
  • 1/4 cup Parmesan cheese

Combine eggs and milk in a small bowl. Add flour and salt. Beat well. Heat a 9-inch skillet over medium heat. Pour batter into skillet, 1/3 cup at a time. Tilt pan to spread evenly over bottom. When pancake is lightly browned and set, turn it over to brown the other side. Makes four pancakes.
Brown hamburger meat. Add tomato paste, onions, basil, garlic salt, oregano, and salt and pepper. Place one pancake on bottom of a 10-inch baking pan. Spread with meat, cottage cheese, mozzarella cheese, then 1 tablespoon Parmesan cheese. Repeat layers. Bake at 350° for 30 to 35 minutes.
