Appetizers - Cheesy Shrimp Canapés

  • 10 white bread slices
  • 2 tablespoons butter or margarine
  • 1/2 teaspoon thyme leaves
  • 4 ounces shrimp, shelled, cooked, and chopped
  • 1/2 cup Swiss cheese, shredded
  • 1/3 cup mayonnaise
  • 1/2 cup fresh bread crumbs
  • 1/4 teaspoon salt

Preheat oven to 400°F. Using a two-inch round fluted cookie cutter, cut 2 circles from each bread slice (reserve leftover pieces for crumbs).

In a one-quart saucepan over low heat, melt margarine with thyme leaves. With pastry brush, coat bread circles with butter mixture and place on a small cookie sheet. Bake for 10 minutes or until golden brown.

Combine shrimp with remaining ingredients. Shape shrimp mixture into 20 balls.

Preheat broiler. Lightly press shrimp balls onto toasted bread circles and place about seven to nine inches from broiler. Broil canapés for 10 minutes or until they are hot and bubbly. Makes 20 appetizers.
