Breads, Rolls, and Muffins - Southern Sweet Potato Bread

  • 11/2 cups self-rising flour
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon
  • 1 cup white sugar
  • 2 eggs, lightly beaten
  • 2 tablespoons milk
  • 1/2 cup vegetable oil or applesauce*
  • 1 cup mashed, cooked sweet potatoes or 1 can sweet potatoes, drained and mashed
  • 1 cup chopped pecans
  • 1/2 cup golden raisins

Preheat oven to 350ยบ. Grease bottom only of a 81/2x41/2-inch loaf pan.
In a large bowl, stir together flour, spices, and sugar. Stir in eggs, milk, and oil or applesauce and blend well. Stir in sweet potatoes, pecans, and raisins. Pour batter into prepared pan. Bake about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 15 minutes. Remove from pan and cool on wire rack before slicing.
*The applesauce makes the bread healthier.
