Desserts - Old-Fashioned Banana Custard Pudding



INGREDIENTS
  • 1 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 eggs yolks, beaten (reserve whites)
  • 3 tablespoons butter
  • 2 teaspoons vanilla
  • 1 box vanilla wafers
  • 4 bananas, sliced
  • 3 heaping tablespoons sugar

INSTRUCTIONS
Combine 1 cup sugar, flour, and salt in a thick kettle; stir in milk. Bring to a boil over medium heat, constantly stirring with a wooden spoon. Boil and stir for two additional minutes. Blend a small amount of the hot mixture into beaten egg yolks; return all to kettle and cook one minute. Do not boil. Remove from heat and add butter and vanilla; stir well.
In a serving dish, layer vanilla wafers, sliced bananas, and 1/2 of the custard. Repeat layers with custard as the last layer. In a separate bowl, beat reserved egg whites with 3 heaping tablespoons sugar until peaks form. Cover custard with meringue and broil until brown.
