Poultry and Eggs - Turkey Tomorrow



INGREDIENTS
  • 3 cups cooked turkey, cubed
  • 2 (10 1/2-ounce) cans cream of mushroom soup
  • 4 hard-boiled eggs, diced
  • 2 cups celery, chopped
  • 2/3 cup quick-cooking rice, uncooked
  • 2 tablespoons lemon juice
  • 2 tablespoons onion juice
  • 1 cup mayonnaise
  • 1/2 teaspoon salt
  • Dash cayenne pepper
  • 4 cups potato chips, crushed

INSTRUCTIONS
Combine all ingredients except potato chips. Mix lightly, then add 2 cups potato chips. Spread the remaining potato chips on top. Bake at 375° for 30 to 35 minutes.
Yield: Eight to 10 servings.
