Poultry and Eggs - Aunt Kate's Turkey Bake

  • 3 cups cooked turkey, diced
  • 4 tablespoons butter or margarine
  • 1/8 teaspoon black pepper
  • 3 tablespoons soy sauce
  • 1/2 cup ripe olives
  • 1/4 cup flour
  • 1 small onion
  • 4 ounces thin egg noodles
  • 1 (3-ounce) can chopped mushrooms
  • 3/4 teaspoon salt
  • 1 1/2 cups milk
  • 1 1/2 cups chicken broth
  • 1 (2-ounce) can chopped pimientos
  • 1 cup buttered bread crumbs

Cook egg noodles as directed on package. Drain. Chop onion and cook slowly in butter. Blend in flour, salt, and pepper. Stir in milk and chicken broth until well heated.
Slice olives in large pieces and add to mixture along with soy sauce, pimientos, and mushrooms. Combine with noodles and turkey. Mix slightly. Pour into a baking dish and top with bread crumbs. Bake at 350° for 25 to 30 minutes.
Yield: Eight to 10 servings.
