Cookies and Candy - Rocky Road Candy

  • 1 (12-ounce) package semisweet chocolate chips
  • 1 (14-ounce) can sweetened condensed milk
  • 2 tablespoons butter
  • 1 (101/2-ounce) package of miniature marshmallows (51/2 cups)
  • 1 (8-ounce) jar unsalted roasted peanuts

In a medium saucepan, combine chocolate pieces, sweetened condensed milk, and butter. Heat over low heat until chocolate is melted; remove from heat. In a large bowl combine marshmallows and peanuts. Fold in chocolate mixture.
Line the sides and bottom of a 13-x-9-x-2-inch pan with wax paper or spray it with cooking spray. Spread candy mixture into pan. Chill two hours or until firm. Remove from pan and peel off wax paper. Cut into 1-inch squares with a wet knife. Wrap pieces in plastic wrap or store in container that has a tight seal.
