Meats & Seafood - Pizza Burgers with Oven-Fried Potatoes



INGREDIENTS
  • Burgers:
  • 1 pound extra-lean ground beef
  • 1 medium onion, chopped (1/2 cup)
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 (14-ounce) jar pepperoni- flavored or regular pizza sauce
  • 1/2 cup sliced ripe olives
  • 6 whole-wheat sandwich buns, split
  • 1 cup (4 ounces) shredded pizza cheese blend
  • Potatoes:
  • 3/4 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon garlic powder
  • 3 medium baking potatoes
  • (8 to 10 ounces each)
  • Cooking spray

INSTRUCTIONS
Burgers: In a 10-inch skillet cook beef, onion, and bell pepper over medium heat for eight to 10 minutes, stirring occasionally, until beef is browned; drain. Stir in pizza sauce and olives. Heat to boiling, stirring occasionally.
Spoon about 1/2 cup beef mixture on bottom half of each bun. Quickly sprinkle each with 2 tablespoons of cheese; add tops to bun. Serve immediately or let stand about two minutes until cheese is melted.

Potatoes:Heat oven to 425ยบ. Mix salt, sugar, paprika, mustard, and garlic powder.
Gently scrub potatoes, but do not peel. Cut each potato lengthwise in half; cut each half length wise into 4 wedges. Place wedges, skin side down, on a greased 13-x-9-x-2-inch baking pan.
Spray potatoes with cooking spray until lightly coated. Sprinkle with salt mixture. Bake uncovered 25 to 30 minutes or until potatoes are tender when pierced with fork. (Baking time will vary depending on the size and type of the potatoes used).
