Meats & Seafood - Grilled Skirt Steak

  • 2 pounds skirt steak
  • 2 tablespoons lemon juice
  • 1/3 cup whole-grain dijon mustard
  • Pinch of salt and pepper
  • Buttercrunch lettuce
  • Blue cheese or feta cheese crumbles

In a small bowl, mix lemon juice, mustard, salt, and pepper. If your steak has fat, trim it close. Place steak and marinade in a resealable bowl or plastic bag (the bag allows you to massage the meat while marinating). Marinate steak for two to three hours.
Remove steak from marinade and grill six minutes on each side or until desired doneness. Let meat rest for 10 minutes (this makes all the difference).
Thinly slice the steak against the grain. Place on a bed of buttercrunch lettuce and place crumbled cheese on top.
