Meats & Seafood - Crab and Mushroom Sandwiches

  • 3 strips bacon, diced
  • 11/4 cups mushrooms, sliced
  • 1/4 cup chopped onions
  • 5 ounces crabmeat
  • 1 cup Swiss cheese
  • 1/3 cup Parmesan cheese
  • 1/2 cup mayonnaise
  • 6 English muffins
  • Dash of cayenne pepper
  • Dash of paprika

Fry bacon over medium heat until crisp; remove and drain. Sauté mushrooms and onions in bacon drippings until mushrooms begin to turn brown. Cool.
Mix crab, cheeses, and mayonnaise. Combine with bacon, mushrooms, and onions. Spread mixture on sliced, buttered muffins. Sprinkle with cayenne pepper and paprika. Place sandwiches on cookie sheet and bake 15 minutes at 400º.
Note: Shrimp may be substituted for crab.
Yield: Six servings.
