Poultry and Eggs - Pizza Frittata

  • 6 ounces cream cheese, softened
  • 6 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon each dried basil and oregano leaves
  • 2 tablespoons butter
  • 1 1/2 cups sliced fresh mushrooms
  • 1/2 cup chopped green peppers
  • 24 slices pepperoni, coarsely chopped
  • Prepared pizza sauce

Beat cream cheese, eggs, salt, and seasonings until well blended. Melt butter in a 10-inch ovenproof skillet over medium heat. Add mushrooms and peppers; cook and stir five minutes or until crisp-tender. Stir in cream cheese mixture and pepperoni. Cover and cook five minutes or until center is almost set. Heat broiler. Uncover frittata and broil six inches from heat for two to three minutes or until golden brown. Top with pizza sauce.
